blueberry lime muffins
ingredients 2 1/2 cups plain flour 3/4 cups sugar 125g unsalted butter 2 teaspoons baking powder 1 teaspoon bicarb soda 1 teaspoon salt 1 cup (250ml) natural yogurt 2 eggs lightly beaten 1/4 cup drained blueberries 2 teaspoons lime zest

Preheat oven to 375 degrees.
Mix dry ingredients. Rub in butter. Combine egg, yogurt and zest & add to dry ingredients. Stir through until just combined - do not overmix. Fold in blueberries and bake for 20 - 25 minutes. Makes 12 standard muffins.
